My very awesome mother -in-law (Mama G) surprised me with a batch of her new creation “Mama G’s Gluten-Free PBC Raisin Oatmeal Cookies”. These are amazing. It’s like a trail mix cookie. The chocolate and raisins are just the perfect ratio of sweetness with the peanut butter cookie dough. We had to ration these out so that we didn’t eat the whole batch at once! Now I know many of you probably don’t eat oats. After years of being told that they contain gluten, I got used to avoiding them. Even now they say that oats are gf but my stomach doesn’t love it if I eat too much of them. I can handle a few cookies on occasion. If you are totally opposed to oats, another option to consider is Quinoa Flakes. I find these to be an excellent substitute for recipes that call for oats and they have a lot of protein (So that makes the cookies healthy right!)
Hope you enjoy this recipe for Mama G’s Gluten-Free PBC Raisin Oatmeal Cookies:
1/2 c butter (take the stick of butter from the fridge and microwave (in wrapper) for 15 seconds EASY!
3/4 c peanut butter
1/2 c sugar
1/2 c brown sugar CREAM together.
1 egg BEAT in.
1/2 t baking powder
1/2 t baking soda
1/2 c gluten free oatmeal (or try Quinoa Flakes)
1 c glutenous rice flour (No gluten this is made from super sticky rice and is found at most asian markets)
1/4 tapioca flour
Add in:
1/2 bag chocolate chips
1 /2 cup raisins
375 degrees for 12-15 minutes. Cool completely on the cookie sheet. No need to grease cookie sheet. Enjoy!
