Linguine with Broccoli Rabe, Caramelized Onions and Sausage

Gluten-free pastaA gluten-free pasta dish that will make your mouth water. Linguine with Broccoli Rabe, Caramelized Onions and Sausage is a fabulous Saturday night meal. This gluten-free dish takes time to prepare but is worth the wait. The garlicky greens paired with the sweet Italian sausage and caramelized onions has a delicious, dynamic flavor.

Linguine with Broccoli Rabe, Caramelized Onions and Sausage Recipe

  • 4 tbl olive oil
  • 1 lb of Italian chicken sausage, crumbled into pieces
  • 8 cloves of garlic, sliced thinly
  • 1/2 tsp red pepper flakes
  • 1 lb Tinkyada Gluten-free Linguine
  • 1 lb broccoli rabe, tough stems removed
  • 1/2 cup freshly grated Parmesan cheese
  • 2 Onion, thinly sliced
  • 3 tbl butter
  • 2 tbl sugar
  • 1 cup of chicken stock
  • 1 tbl balsamic vinegar

Bring a large pot of water to a boil. Add broccoli rabe and cook for 2 minutes. Drain well. Transfer the broccoli rabe to  a large bowl and toss with half the garlic, 1 tbl of olive oil, salt, and pepper. Spread evenly on a large jellyroll pan and roast at 375 for 10 to 15 minutes.

Return the pot of water to the stove and boil. When the water is boiling, add the pasta and cook according to the directions on the package. Reserve 1 cup of the pasta water before draining.

Pour 2 tbl of olive oil into a skillet and heat over medium heat. Add the garlic and cook for 1 minute. Add the sausage and cook until browned all over. Remove the sausage and garlic and set aside.

In the same skillet, melt the butter over medium heat. Add the onions and cook until they have browned all over, about 15 minutes. Stir the onions frequently to prevent burning. Add the stock and sprinkle with sugar. Cook stirring continuously until the onions are glazed, about 5 minutes. Add the vinegar and cook until the onions are coated in a thick syrup. Remove the onions from the pan.

Combine the pasta, sausage, broccoli rabe and onions in a large bowl. Slowly add the reserved pasta water to the bowl, tossing the ingredients to incorporate. Add the Parmesan cheese and toss to incorporate.

Serve with your favorite wine and enjoy.
