As I prepare for my final semester of the MBA to begin this week, I am in need of easy gluten-free recipes so I whipped up a batch of thick and creamy butternut squash soup. I was looking for a gluten-free soup that would fill me up on a class night, warm the winter chill (ok it isn’t that cold out but still) and freeze easily. This recipe is easy, healthy and filling. I don’t use any dairy so it can be enjoyed by vegans too. I like to make a big pot of gluten-free soup on the weekend for a quick and easy lunch or dinner during the week. By choosing easy healthy ingredients, I can cook the soup while I chop and prep for the rest of the week. While there are many gluten-free fast food options becoming available, I still want to choose healthy gluten-free recipes like a nice homemade gluten-free soup that will keep me healthy and able to balance the crazy work/school balance.
This butternut squash soup recipe is easy to whip up and is an excellent serving of veggies. You can eat it as a traditional soup with a nice gluten-free roll and salad or spoon it over veggies and rice to jazz up a simple meal. The granny smith apple gives this squash soup recipe a hint of sweetness that pairs nicely with the butternut squash flavor.
Gluten-free Soup Recipe – Butternut Squash
- 3lb butternut squash – peeled, seeded and cubed
- 1 yellow onion, finely chopped
- 6 cups of gluten-free veggie broth
- 1 granny smith apple, cored and diced
- 2 tbl olive oil
- salt and pepper to taste
- 1 tsp dried marjoram
- sprinkle of dried rosemary
In a large soup pot, heat the olive oil and saute the onions until they brown. Add in the squash and apple and saute for another 2 min. Add the broth, salt and pepper and simmer for 30 min. Crumble the marjoram and rosemary into the squash soup. Puree the soup with and immersion blender or in a food processor. Serve the gluten-free soup with your favorite roll and salad. Cool completely before freezing.

A dollop of sour cream does sound great. I sometimes use greek yogurt in place of sour cream. The great thing about this soup is that you can dress it up however you like. Hope you enjoy.
