Gluten-free Pasta with Clam SauceMost gluten-free pasta with clam sauce recipes are filled with butter and cream, so they are not the best way to maintain your healthy New Year’s Resolution and can’t be really heavy to heat. But fear not, as you start off the New Year, with healthy gluten-free eating resolutions, you don’t have to sacrifice taste. Whenever I am cooking, I try to find healthy alternatives that don’t sacrifice taste.

Try this gluten-free pasta with clam sauce recipe for a warm, delicious and filling gluten-free pasta dinner. This meal is ready in under 30 minutes and reheats perfectly for lunch the next day. It is filled with veggies and protein and you won’t miss the heavy cream.

Gluten-free Pasta with Clam Sauce Recipe

  • 3 cloves of garlic minced
  • 2 tbl olive oil
  • 2-10 oz cans of baby clams, drained
  • 2 tbl of potato starch
  • 2 cups nonfat milk
  • 1 package of gluten-free pasta (preferably gluten-free linguine)
  • chopped parsley
  • 1 red or yellow pepper, chopped
  • 1 pint of grabe tomatoes, chopped
  • 1 cup chopped sun-dried tomatoes (not soaked in oil)
  • grated parmesan cheese for garnish (optional)

Bring a pot of water to a boil for the pasta. In a skillet, heat the oil, saute the garlic for 1 min. Add the peppers and sun-dried tomatoes and saute for 3 min. Add the clams to the pan and saute for 1 min. Add the grape tomatoes and saute for another min. Add the milk and simmer for 1 min. Add the potato starch and simmer stirring continuously for 2 min until the sauce is thickened. Toss the gluten-free pasta with the creamy sauce and fresh parsly. Garnish with a light dusting of parmesan cheese and any herbs and spices you enjoy like red pepper flakes and oregano.
