Gluten-free Apricot Chicken

A delicious warm gluten-free dinner in under 1 hour. Easy to prepare and very tasty. This recipe is a signature dish of Ace, my mom. The sweetness of the apricot glaze over the golden chicken is mouth watering. This dish always makes me think of springtime and Passover. It is a wonderful gluten-free meal when you are ready for a fresh, fruity spring dinner.

Note on this recipe. When you first mix up the sauce, you will worry that there isn’t enough to cover all of the chicken. As the chicken bakes the juices will pool with the sauce resulting in a delicious gluten-free apricot chicken glaze. There will be extra sauce leftover at the end that you c an use to add extra flavor to any side of rice or baked sweet potato. Eat the slivered almonds with the chicken or spoon them with the sauce over your side dish.

Gluten-free Apricot Chicken Recipe

⅓ cup honey
small jar apricot marmalade
½ tsp ground ginger
¼ tsp garlic powder
1 t brandy
½ c slivered almonds
1 orange thinly sliced
1.5 lbs of chicken breasts or thighs

Pour marinade over the chicken. Place slice of orange on each piece of chicken. Bake at 375 for 30 minutes turn the chicken over to coat both sides with more sauce. Bake 15 minutes until cooked through and golden brown. Serve and enjoy with a garden salad, brown rice or sweet potato.
