I must confess, I have a new addiction, gluten-free tamale pie. After making this fabulous dish last week, I can't stop craving it. I dream about eating more. This tamale pie recipe is really delicious and super easy. The sweetness of the cornbread combined with the spicy bean/meat filling makes it the ultimate comfort food. Since you add your favorite salsa and season it to taste, you can make it as mild or spicy as you like. As an added bonus it freezes really well which comes in handy for working families and stressed out students. I hope you enjoy this recipe.
